Coffee Catch-Up #35

Hi everyone! Happy Monday! I hope you had a great weekend! I had a very full and eventful weekend. I visited family out of town on Friday and then worked Saturday and was off Sunday to run my first marathon!

It was a whirlwind of a weekend, but so fulfilling!

Let’s take it back a few days.

I got a lot of meal prepping done and tried some new recipes too! I made easy egg bites and used the leftovers for scrambled eggs! Packed with protein and flavor! The recipe for the egg bites is from the Simplified cookbook.

I got in some time outside for some early morning walks and runs which felt good before the race.

I made a new recipe, Shrimp and Grits. It got me into some Southern cooking, yum! The recipe was also from the Simplified cookbook.

On Friday, I visited family out of town which included lunch and time in a new park. I love any excuse to get some sunshine in!

Saturday was all about marathon prep. I picked up my race packet and t-shirt!

I was up early for race day! Lots of fuel for the day ahead!

Race ready!

Post-race! It was a a learning experience and challenging at time, but I was so proud of myself for accomplishing it.

I was very proud racing!

I will have a full marathon training look back in the coming weeks, but right now, I’m soaking in the accomplishment. That’s a look into my weekend. Packed full in the best way. I hope you had a wonderful weekend and I’ll see you back here on Wednesday!
