Coffee Catch Up #6

Good morning and happy Monday!

How are you feeling after the Super Bowl last night? Stay up wayyyyy too late? Did your team win or were you just there for the snacks and commercials like me? Haha!

We enjoyed a spread filled with all the snacks, from sausage balls, to shrimp, guac, and cookie cake. It was so good. We ended up having a busier weekend than I thought, so I have lots to catch you up on.

Something on my Winter Bucket List was to catch up on my shows and start a new series. I am fully caught up on my shows and started to watch The West Wing. I have heard about it for years and I’m finally getting around to watching it. It’s one of my fiances favorite shows, so we will see if it lives up to its reviews. So far, I am really liking it.

I got a lot of reading done over the past few days with frigid temperatures, it didn’t give me a lot of reasons to go outside. I finished one book on Thursday and started a new one on Friday. It may be chilly, but the sun is out which makes everything better!

Staying indoors meant LOTS of baking. I made Mix and Match Mama’s Cranberry Almond Granola-which made my house smell divine.

I made Buckeyes for the first time and although they weren’t pretty, they sure were tasty. This recipe was from the Simplified cookbook.

I also made a kale, apple, cheddar salad with almond. I LOVED all the different textures.

We kicked off the weekend by watching the Olympics Opening Ceremonies. I love the games and the opening and closing ceremonies are always a favorite for me!

We unexpectedly had a full house this weekend with lots of company, as all my siblings came home for various reasons. We enjoyed lots of family time together and decided to celebrate Valentine’s Day early with treats and decorations.

One of the things I love about Valentine’s Day is that you can put as much or as little effort into it as you want. Want to go all out? Go right ahead. Want to keep it low key? Be my guest! There are so many options! The sun was out so I enjoyed some time outside even with the cold. We did grocery shopping and laundry in between work and settled in to watch the big game last night.
